Culinary Course Weekend Schedule

Course is offered two weekends:
Friday, June 14 - Sunday, June 16, 2019
Friday, July 12- Sunday, July 14, 2019

11:00 a.m. -
 1:00 p.m.    Registration - Main Lounge, Dahl Centennial Union (lunch on own)
1:00 p.m.     Welcome and Introductions - Nobel Room, Dahl Centennial Unionl
1:30 p.m.     Basic Food Safety and Sanitation
2:30 p.m.     Basic Knife Skills
3:30 p.m.     Seasoning Demo / Hands On
4:30 p.m.     Roasting Demo / Hands On - prepare starch course for dinner by roasting
                      Sauteeing Demo / Hands On - prepare vegetable course for dinner by sauteeing
                      Grilling Demo / Hands On - prepare protein for dinner by grilling
                      Sauce Work / Hands On - prepare two basic sauces for dinner
6:30 p.m.     Dinner - Nobel Room, Dahl Centennial Union -- remainder of the evening is on your own

8:00 a.m.     Breakfast and Discussion - Nobel Room, Dahl Centennial Union
9:00 a.m.     Field Trip to Luther Garden - select and harvest produce for preparation - meet at front of Union -
                     we will provide two vans and drivers to take the group to the Luther Garden and back
11:00 a.m.   Clean and Prep Salad for Lunch - review food preparation and handling
12:00 p.m.   Vinaigrette Preparation - prepare three varieties of vinaigrette
12:30 p.m.   Lunch - Nobel Room, Dahl Centennial Union
1:30 p.m.     Prep for Sunday Brunch, Chef to Prepare Special Dinner - create menu for brunch
5:30 p.m.     Dinner - Nobel Room, Dahl Centennial Union
8:00 p.m.     Gathering at Pulpit Rock Brewing Co. - Bring your family and friends!

8:00 a.m.     Coffee and Pastry - discuss notes for brunch prep and service - Nobel Room, Dahl Centennial Union
8:30 a.m.     Create Fire Times, Outline, and Station Assignments - ready to execute brunch menu
9:00 a.m.     Fire Brunch Service - work assigned stations as a team and cook brunch
10:30 a.m.   Enjoy Brunch with your Guests - course completion and certificates - Nobel Room, Dahl Centennial Union
                     No charge for course participants, $10 per person for family and friends - pay at door
