'Food, Fish and the Future': Luther to host lecture by Chef Barton Seaver Nov. 4

Recipient of a 2012 Second Nature Climate Leadership Award. One of eight colleges across the country to receive an "A" on the 2011 College Sustainability Report Card.

Barton Seaver, chef and author, presents "Food, Fish and Future," a lecture on sustainable seafood and issues in Bristol Bay at 7:30 p.m. Sunday, Nov. 4 in Room 102 of the Franklin W. Olin building on the Luther College campus.

The lecture is open to the public with no charge for admission.

Seaver is on a mission to restore people's relationship with the ocean, the land and with each other through dinner. He believes food is a crucial way for people to connect with the ecosystems, cultures and other people through the world.            

Seaver is concerned with the Bristol Bay area in particular. Despite its unmatched productivity and critical role in sustaining healthy salmon populations, he says Bristol Bay is under threat from foreign mining companies seeking to turn the watershed into an industrial mining district. Seaver believes this mining not only risks the salmon but the culture of independent and native fisherman who have sustained on this resource for a millennium.

In early 2010, Seaver became a fellow with the National Geographic Society to increase awareness of ocean issues and inspire action. He has developed a list of ocean friendly substitutes for popular, yet depleted, seafood species and co-created the Seafood Decision Guide (http://tinyurl.com/6rvfgnk) to help consumers choose seafood based on health and environmental factors. Seaver's first book "For Cod and Country," is a full-color exploration of those themes, showcasing seasonal seafood, vibrant spices and farm-fresh produce.

He was Esquire magazine's 2009 "Chef of the Year," and was honored as a "StarChefs.com Community Innovator" as voted by over one thousand chefs and culinary leaders worldwide.

A highly sought speaker, Seaver lectures regularly at Harvard University Medical School and Dartmouth College. He often speaks at institutions and has given keynote addresses for Basel World 2011, The Nature Conservancy, the School Nutrition Association and the American Culinary Federation. Seaver makes regular appearances on television, hosted a show titled "In Search of Food" on the Ovation network and is featured on innumerable websites.
