The Luther cafeteria will be undergoing a $1.5 million dollar renovation this summer. This semester, the caf has implemented some really awesome changes to test out for next year! My favorite: stir fry Tuesdays and Wednesdays.
On Tuesday and Wednesday, the main line offers a variety of foods to choose from that can be cooked to order. You select a bowl full of meats, veggies, etc. from the mainline and bring it over to a stir fry station where a Norse Chef will add sauce and cook it to order. It's also an awesome option because it has the potential to be meat-free, gluten-free, etc.
I attached two pictures of the past few weeks: the first is a coconut chicken curry with fresh mango - so yummy! I added some spinach and veggies for some extra nutrition. Today, a steak stir fry was offered in the main line. Again, I got creative and added veggies like carrots and spinach from the salad bar. The main line offered noodles as a base, but since I'm not a huge fan of noodles, I got quinoa from the vegetarian line instead. Getting creative in the caf always leads to extra special meal! I've found that walking around the caf and really scoping things out leads to a more tasty, as well as a more well-balanced, meal.
Overall, I'm really excited for the changes that will be happening in the cafeteria next year. If what they are offering right now is any indication, it is going to be very tasty!
